How to Cook

Pan-sear (the classic): Season skin-side with salt. Heat oil in a pan until smoking, place skin-side down and press gently for 30 seconds. Cook 4–5 minutes skin-side, flip and cook 1–2 minutes — flesh should be just opaque. Oven-bake: Brush with olive oil, lemon, and dill. Roast at 200°C for 15–18 minutes. Sashimi or poke: Slice thinly against the grain and serve with soy, ginger, and sesame — the quality makes it ideal for raw preparations.


Storage

Keep at -18°C or below. Once thawed, refrigerate and consume within 24 hours. Do not refreeze.
