How to Cook
For the braai: brush with garlic butter, lemon, and a pinch of chilli, then grill over medium-high coals for 3–4 minutes per side until the shells are charred and the flesh is just cooked through. For a pan sauce: cook in butter and garlic, deglaze with white wine, and finish with cream or a squeeze of lemon. For a curry: add whole to a spiced tomato base and simmer gently for 8–10 minutes — the heads enrich the sauce as they cook.
