How to Cook
For the classic braai: marinate in apricot jam, garlic, and a squeeze of lemon, then grill skin-side down over medium coals for 15–20 minutes until the flesh flakes easily. For a smoky oven bake: wrap in foil with butter, garlic, and fresh herbs and roast at 180°C for 25–30 minutes. Snoek also works beautifully in a curry — flake the cooked fish into a spiced tomato base and serve over rice.
