How to Cook Breyani Rice (Traditional Method)

Ingredients:

  • 2 cups Breyani Rice

  • 4 cups water

  • 1 tsp salt

  • 1 tbsp oil or ghee

  • 2-3 whole cloves

  • 2-3 cardamom pods

  • 1 small cinnamon stick

  • ½ tsp turmeric (for a golden colour, optional)

Instructions:

1️⃣ Rinse & Soak:

  • Wash the rice under cold water until the water runs clear.

  • Soak in water for 30 minutes to ensure even cooking.

2️⃣ Parboil the Rice:

  • Bring 4 cups of water to a boil in a large pot.

  • Add the soaked rice, salt, and spices (cloves, cardamom, cinnamon, and turmeric).

  • Cook for 5-7 minutes until the rice is 70% cooked (grains should be firm but not fully soft).

  • Drain and set aside.

3️⃣ Layering & Steaming for Authentic Breyani:

  • In a separate pot, prepare your marinated meat, chicken, or vegetables with spices and fried onions.

  • Layer the parboiled rice over the curry, alternating with more fried onions and ghee/butter.

  • Cover the pot with a tight lid and steam on low heat for 25-30 minutes (this process is called ‘Dum’).

  • Once done, gently fluff the rice and mix before serving.
